Who's behind it

Built by an operator, not a consultant.

"Induction is a folder, a shadow shift and hope. That's not training. That's orientation."

Twenty years managing Canberra restaurants. I worked them, ran them, owned a couple, and in 2012 I left the floor to place people into other operators' venues instead.

Hiring is where the penny dropped. The people were rarely the problem. A good hire would start on a Monday, get a folder and a shadow shift, and be gone by winter, and the venue would be on the phone to me again by spring asking for another one. You cannot recruit your way out of a system that teaches nothing.

Since then: Canberra Eats, built eight days into lockdown. Reviews for the Canberra Times since 2021. Chefs Eat Canberra, the book. I still pay for every meal I review.
